1 tsp. butter
1 tsp. chopped shallots
2 tbsp. white or red wine
3 tsp. preserves of choice
6 oz. Glace de Veau Roasted Veal Stock Reduction
Salt and pepper, to taste
SAUTE shallots in butter in a saucepan. Stir in wine and preserves; reduce by 25%.
STIR in Glace de Veau Roasted Veal Stock Reduction. Season to taste with salt and pepper.
